David Olkovetsky’s new Artisan Revere chef’s knife looks familiar. Its tall, uber-thin profile and ergonomic heel are borrowed from designs by lauded American knifemaker Bob Kramer, and its curvy, inch-perfect handle pays homage to Murray Carter’s “International Pro” style grip. Olkovetsky isn’t trying to hide these things.
A former metals analyst, Olkovetsky used a high-carbon, high-hardness, high-alloy stainless steel called Elmax instead of the usual carbon steel of his high-end competition. He shortened the heel height to 2.05 inches so it would fit in knife blocks (something Kramer’s shape can’t do). He shifted the balance of the blade to the end of the handle to maximize power. He removed all sharp edges from anywhere a cook might hold the knife, allowing the cook to choke up more on the blade and have more control over cuts.
Olkovetsky says his objective was to make the ideal mixture of cutting performance, edge retention, toughness, corrosion resistance, balance and ergonomics. Did he? For $249, you can back the Artisan Revere on Kickstarter and see for yourself.
