These are three — in South Carolina, New York and California — that you should plan on staying at this summer.

The way to have a three-day weekend that feels like a vacation rather than a consolation prize is with a spectacular hotel. Sheets of innumerable thread, marble baths, Champagne waiting in buckets, rooftop pools and 11-course tasting menus that change according to the 72 five-day farming cycles of Northern California agriculture? Yes, all of that will do nicely, and some or all of it is available at these three hotels — in Charleston, Healdsburg and New York City — opening in the next three months.

Single Thread

Healdsburg, CA: Located in the heart of Sonoma winemaking country, Single Thread Farms is one of the most anticipated openings of year. That’s because of the food: Though the property will have five luxury suites, the main draw is the 55-seat restaurant run by Kyle and Katina Connaughton, who will serve Japanese-influenced 11-course tasting menus using seasonal ingredients. A press release issued by the restaurant says, “The menu will change according to the 72 five-day farming cycles of Northern California agriculture, as outlined in the ancient Japanese Farmers’ Almanac.” Eater makes the argument that it’s the most important opening of the year in the food world. Expected to open in July.

The Dewberry

Charleston, SC: Housed in the renovated Mendel Rivers Federal Building in Charleston, South Carolina, the Dewberry will open this spring with 155 rooms, a restaurant called Henrietta’s and a rooftop bar specializing in citrus cocktails and seafood crudo. Consistent with the general vibe of Charleston, expect elegant, graceful decor and attentive service. Expected to open in May.

The Beekman

New York, NY: The revitalization of New York City’s far downtown continues, buoyed by the Freedom Tower, a radical new train station, and a major overhaul of the South Street Seaport. The Beekman, A new property from Thompson Hotels, will contribute. The main attraction is the building itself, which is designated as a landmark by the city and has a beautiful, nine-story atrium with a pyramidal skylight. Rooms will be luxurious — art, oak floors, marble baths, craft cocktail kits — and there will be restaurants from heavy hitters Keith McNally and Tom Colicchio. Expected to open in July.
